Vincent has the brightness of eye and jaunty sweater we like in our winemakers. His passion is uncontained and the wines he produces show this, and indeed the level of complexity that the Gneiss and Gabbro soils of the region can produce. He uses lees ageing, large vessels, extended ageing in tank and barrel, and of course he is organic; moving to biodynamic.  He is located in Monnieres in the heart of Sèvre et Maine and has a vast array of vineyard locations covering 26 hectares. He has amassed some of the finest vineyards in the region, by careful buying and selling, and now reckons he has the perfect combination of terroirs. Gorges is from the Cru which lies on Gabbro soil from old vines. This is a pure, stainless steel aged cuvée with real depth and charm.


Je t'aime mais J'ai soif remains an eduringly popular vin de soif with a label by one of the hottest street artists in Nantes. Mouton Noir - so called in reference to Vincent's dogmatic pursuit of organic and biodynamic practice is a fruit-forward fresh coutner to the bracing edge of Fay d'homme. Gros Plant is the newest arrival to the stable and just begs for a plate of oysters.

Vincent Caillé Wines

X Bulles 90% Chardonnay, 10% Cot. Made with the Methode Ancestrale. A natural co-fermentation is started in tank, after which it is bottled and the fermentation continues in the bottle. This is very much in a Brut style (RS is 5gr/ ltr) the wine has a golden hue and a refreshing palate. 11.5% ABV.
Corbeau Blanc, Gros Plant du Pays Nantais 100% Folle Blanche. A perfect example of a wine made from creatures from the sea. The fresh, mineral citrus Gros Plant (as it is known locally) is given the Vincent treatment, producing a wine that far out plays it lowly beginnings.
Je t`aime mais j`ai soif Melon de Bourgogne,Sauvignon Blanc, Semillon. A wine initially created out of necessity due to the disastrously low yields of 2017. Vincent bought fruit from a friend in Ardeche. As such an unusual blend of Marsanne and Melon B. was born. He liked the wine so much he has contuned to make it year on year. The blend evolves yearly to suit the vintage but always adds a touch of weight to the otherwise austere nature of young Melon de Bourgogne.
Domaine Le Fay d`Homme Muscadet 100% Melon de Bourgogne. Produced 'Sous Nantais' (underground tanks) from 45yo vines on gniess and mica/shist soils around the Cru village of Monnieres St-Fiacre. Low yields and careful lees ageing and minimal use of SO2 help to create a palate that is complex with a fleshy weight, making this one of the regions' bench-mark wines.
Muscadet Mouton Noir 100% Melon de Bourgogne. Named 'Black Sheep' after Vincent, who was one of the first outliers in Muscadet to farm organically, way back in 1996. The wine is made of young vines all within the Cru Communal of Monnieres-Fiacre, which he has chosen to declassify.
Muscadet Monnieres-Fiacre 100% Melon de Bourgogne. From one of Muscadet's top Cru Communal. Selection of the oldest vines (above 65 yrs) in the heart of the appellation on gneiss and mica soils. The yields are kept low at 32 hl/ha. Gentle 21 day fermentation, followed by 30 months aging on the lees. A wine which encapsulates all the gravitas of modern Cru Muscadet.
Muscadet Gorges 100% Melon de Bourgogne. Parcel selection of 50+ yo vines on Gabbro soils in the top Muscadet Cru village of Gorges. The yields are kept low at 35 hl/ha. Gentle 21 day fermentation in Amphore, followed by 30mths lees aging.
Muscadet Terre de Gneiss 100% Melon de Bourgogne. Parcel selection of vines planted in 1954 in the village of Monnieres, on gneiss soils. The yields are kept low at 32 hl/ha. Gentle 21 day fermentation in Amphore, followed by 30mths lees aging.
Vincent Caille Colibri Cabernet Franc 100% Cabernet Franc. Crunchy vibrant style of Cab Franc made from vines planted in Muscadet.
Vincent Caille No. 4 Cot/ Cab Franc/ Gamay Cot, Cabernet Franc, Abouriou, Gamay. Vines planted on gabbro soil in Cru villages of Gorges and Monnieres. Each variety is vinified and aged separately. 5-month aging in 300 and 225-ltr oak barrels, blended together, then a 3-month aging after bottling
Vincent Caille No. 3 Cabernet Franc 100% Cabernet Franc. Aged in stoneware amphora, bottling after 12 months of ageing
