Domaine Deliance is situated in Dracy-le-Fort, two kilometres from the village of Givry. The estate has 15 hectares of vineyard and they specialize in sparkling wines. The Crémant is produced in exactly the same way as Champagne and aged for over 20 months on lees prior to disgorging, adding greater complexity and weight. This is a fabulous alternative to Champagne and the cuvée we have chosen is dominated by Pinot Noir (85%). It has a very expressive nose of red fruits and white flowers, with biscuit undertones, a creamy mousse and soft, fresh palate. An excellent aperitif, it also has the character and versatility to complement a variety of different foods. Their village Givry is an excellent example of Pinot Noir from the Chalonnaise at a very sensible price, with soft tannins and bright cherry and raspberry fruit.
Domaine Deliance Wines
Cremant de Bourgogne | 50 % Pinot noir, 30 % Chardonnay, 20 % Aligote. The wine is naturally fermented and undergoes secondary fermentation after the wine has been blended and aged for 12 months. It lies sur latte for 18 months minimum prior to disgorgement and has 6-8 grams of sugar. |
Cremant de Bourgogne Rose | 50 % Chardonnay, 50 % Pinot noir. The wine is aged for 24mths on the lees before release and is not filtered. A refreshing palate of floral, citrus aromas. |
Givry Rouge | 100% Pinot Noir. From a 1.5ha parcel of 25yo vines on clay-limestone soil, north, east and south facing. The grapes as 100% destemmed and the wine is aged in stainless steel tank for 10 months. |
Bourgogne Rouge | 100% Pinot Noir. Younger vines from vineyards found around the village of Dracy le Fort. Destemmed and fermented in stainless steel with a light extraction and 20 days cuvaison. Finshed in Stainless steel and 20% old barrique for 9 months. |
Givry 1er Cru Clos Charle | 100% Pinot Noir. Clay-limestone soil, eastern hillside. Hand-picked grapes, 100% de-stemmed, fermentation period adapted to the vintage, pumpovers, punchdowns, aged in barrel for a year. Aged in Oak Barrel, of which 30% new. |
Domaine Deliance Cremant de Bourgogne | 50 % Pinot noir, 30 % Chardonnay, 20 % AligotŽ. Lionel is a master of Cremant where his vines are located in Daracy le Fort. The wine is naturally fermented and undergoes secondary fermentation after the wine has been blended and aged for 12 months.
