We are delighted to work with our first English Sparkling Wine grower, Winding Wood. Wines are produced from 1ha of vines just outside Hungerford (Berkshire) by Christopher and Leonie Cooke, who have been committed to biodynamic viticulture since planting Pinot Noir and Chardonnay in 2013 on free draining loam over flint and chalk. We came across them through David Morris who is their biodynamic consultant, with the wines being made and aged by Daniel and Nicola Ham who, as well as incredible skill and a great reputation for sparkling wine production, have one of the only Coquard presses in the UK. It is a real labour of love and due to the tiny production, everything is made as a vintage with initial ferment in oak barrel and extended lees ageing.

Brut Reserve 2019 Chardonnay 62%, Pinot Noir 38%. Made at Hattingley Valley and then disgorged by Daniel Ham at Offbeat Wines. The grapes were hand harvested and whole bunch pressed. After blending, the wine underwent a secondary fermentation in bottle and then spent 36 months on its yeast lees and a further 6 months on cork in cellar. 12% abv, 10g/L dosage.
