David Morris has been cultivating his vineyards in Wales (Parva Farm, Tintern) since 2019. Using biodynamic principles (now demeter certified) he has introduced a rigorous pruning regime and reduced the input of agro-chemicals to zero. The vineyard is a 2ha plot of multiple varietals, on a steep south facing slope 100m above River Wye, planted in the early 1980s.

Parva Bacchus | 100% Bacchus. Whole bunch pressed to stainless steel and settled for 24 hours. Racked via gravity to old 225L barrique. Natural fermentation, natural MLF. No batonnage or topping after primary fermentation.No filtration or fining. Bottled via gravity with no additions after 10 months elevage |
Parva Rose | Field blend of: Pinot Noir, Regent, Seyval Blanc, Bacchus, Pinot Gris, Pinot blanc, Auxerois, Ortega, Schoenburger, Muller-Thurgau, Reichensteiner, Gewuztraminer, Schuerbe, Huxelrebe. Picked sequentially over 3 days, except for the huxelrebe which is picked 10 days earlier. Layered as whole bunches in stainless steel. Semi-carbonic maceration at low temperature for up to 7 days after harvest of last variety. Pressed, settled for 24 hours then racked by gravity to stainless steel. Natural fermentation, natural MLF with stirring on gross lees periodically. No filtration or fining. Bottled via gravity without additions after 12 months elevage. |
T.A.M Chardonnay | This is a wine produced from a Chardonnay vineyard Dave has managed in Frome, Somerset and aged in a second passage Stockinger barrique. 10.5% abv. |
