A high-tech modern winery set inside the walls of a 13th century estate on the edge of the village of Castelnau-de-Guers. This is the heart of Picpoul country and the domaine's vineyards encompass wild scrub, sloping plains and a variety of terroir. With holdings across AOP Picpoul de Pinet, AOP Languedoc, IGP Oc and IGP Pays d'Herault the family have vast resources with which to create characterful, authentic wines. Preservation of the natural environment is at the heart of their philosophy. Measures are in place to limit soil erosion and biodiversity is maintained throughout the vineyards. The estate has been awarded the HVE3 to recognise this work. Winemaking is focused on gentle handling and cool management in the cellar. Sulphur use is minimal. These are bright, fresh wines from a forward looking family operation.

Mer et Montagne Blanc 60% Colombard 34% Ugni Blanc 6 % Picpoul. Limestone, clay and loam soils. Night harvest to preserve aromatic potential. Gentle de-stem and crush followed by temperature controlled fermentation and ageing on fine lees
Mer et Montagne Rose 60% Cinsault 40% Syrah. Limestone, clay and loam soils. Night harvest to preserve aromatic potential. Gentle de-stem and crush followed by temperature controlled fermentation and ageing on fine lees
Mer et Montagne Rouge 45% Syrah 35% Merlot 14% Cinsault 6 % Carignan. Limestone, clay and loam soils. Night harvest to preserve aromatic potential. Gentle de-stem followed by 3 week maceration. Stainless steel ferment and short elevage.
CB Picpoul de Pinet 100% Picpoul. 25 yo vines, planted over clay limestone on the slopes South of Castelnau-de-Guers. Fermented in stainless steel and kept on fine lees for 4 months.
CB St Vincent Chardonnay 100% Chardonnay. Young vines, planted on sandy, alluvial soil next to the Herault river. Fermented in stainless steel and kept on gross lees for 4 months.
CB Viognier 100% Viognier. Single vineyard planted on sandstone soil. Fermented in stainless steel and bottled after 4 months.
CB Midi Rose 80% Cinsault 20% Syrah. 8 hours on skins, pressed and fermented in stainless steel.
CB Syrah 100% Syrah. 25-30 yo vines, planted on selected plots around the village. Sorted at cellar, fermented in concrete with light extraction, with a small portion being finished in wood.
CB St Vincent Pinot Noir 100% Pinot Noir. Young vines planted on alluvial clay soils. Fermentation in concrete tank.
