Patrick Piuze

Patrick hails from Quebec, but he has learnt the intricacies of Chablis by working for Domaine Leflaive and Verget, before becoming cellarmaster at JM Brocard. In 2007 Patrick started his small negociant business so that he could explore the many nuances of the Chablisien terroir. All his wines are made from handpicked grapes, despite machine harvesting becoming the norm in Chablis, and each wine clearly expresses its origins. Rather than simply make a generic Chablis, Patrick produces wines that represent the villages where he sources the grapes from. When talking to Allen Meadows of Burghound.com Patrick stated, "the only thing truly original in the world of wine is the underlying terroir and I have nothing else interesting to add. Anyone can copy anyone else’s techniques so what else is there to make great wines? I believe the answer is simple: Terroir. I want to work only with the fruit from old vines and even then, only old vines that are planted exclusively within the original boundaries of Chablis. If I respect these things, it will be almost impossible to make bad wine.” This pretty much sums it all up, however, Patrick's wines have a consistent house style that is the culmination of carefully considered handling of each individual parcel of fruit, Patrick's skills with the press and Sylvie's instinct during elevage.
